Sign in and open YouTube Paid memberships.

Select Manage membership → Deactivate → Continue to cancel.

Choose a reason and select Yes, cancel; verify the updated status.
BEFORE YOU CONFIRM
If YouTube is billed through Apple or Google Play, manage cancellation through that store instead.
After cancellation
YouTube says benefits usually continue until the end of the billing period.
